I was going to nominate Arabidopsis thaliana (Brassicaceae) which flowers
from seed in 2-3 weeks, but B. repens (something we don't have in the NE US)
surely takes the cake!  -Sam

As I recall Boerhaavia repens is about a dozen days from seed to seed and
there is a Polygonaceae (can't remember which species at the moment) that is
30 days seed to seed.
